Shrimp and Radish Tostadas

These tostadas have all of it — crunchy baked tortillas, creamy black beans, plump lime-pickled shrimp and radishes and a crisp slaw. Even higher, it’s prepared in lower than half-hour!

In case you don’t haven’t any salt added canned beans available, remember to rinse them properly. This may assist to take away as much as 50% of the sodium the beans are canned with!

Shrimp and Radish Tostadas

Components

  • 8 (6-in/15cm) corn tortillas
  • 1/2 tsp salt, divided
  • 1 lb (454g) shrimp, peeled and deveined
  • 1/4 cup (50g) lime juice
  • 5 radishes, thinly sliced
  • 2 inexperienced onions, thinly sliced
  • 1 tsp chili powder
  • 1 (15 oz/425g) no salt added canned black beans, rinsed and drained
  • 2 cups (115g) bagged coleslaw
  • 1/3 cup (82g) plain Greek yogurt

Instructions

Preheat the oven to 400°F (204°C). Mist the tortillas on either side with olive oil cooking spray and organize in a single layer on a baking sheet. Bake till golden brown on one facet, 5 minutes. Flip tortillas and cook dinner on the second facet till golden brown and crisp, about 3 minutes. Take away from the oven, sprinkle with a pinch of salt, and put aside.

Place the shrimp in a medium saucepan and canopy with chilly water. Carry to a boil, cut back warmth to low, and simmer till the shrimp curl and are cooked by, 1–3 minutes, relying on the scale of the shrimp. Drain properly. In a big bowl, mix the shrimp with the remaining salt, lime juice, radishes, inexperienced onions and chili powder. Put aside.

Heat up the beans and 1/4 cup (59ml) water in a small saucepan over medium warmth till sizzling, about 4 minutes. Mash with a fork till half of the beans are mashed.
