Sheet Pan Tofu and Veggies in Sesame Sauce

For those who ever resolved to eat extra greens, this one-pan dish is true up your alley. The number of greens contributes to hitting your vitamin A and calcium targets for the day simply from this meal!

Crank up the oven and roast tofu, candy potatoes, cauliflower and kale, and you’ve got a veggie-rich meal. The straightforward tahini and lemon sauce is a tangy stability to the naturally candy veggies.

Sheet Pan Tofu and Veggies in Sesame Sauce

Components

  • 1 14 oz. bundle extra-firm tofu, drained and pressed dry
  • 2 cups (266g) candy potatoes, cubed into 1/2-inch items
  • 2 tbsp olive oil, divided
  • 2 cups cauliflower florets
  • 2 cups (50g) kale, chopped
  • 2 tbsp tahini
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tbsp tamari soy sauce
  • 1 tbsp water
  • 1 clove garlic, minced

Instructions

Preheat the oven to 400°F (200°C). 

Lower the tofu into 1/2-inch thick cubes. Place the tofu on one sheet pan. Add the candy potatoes to the identical pan and drizzle with 1 tbsp olive oil, tossing gently to coat.

Place the cauliflower and kale on the second sheet pan and toss with the remaining 1 tbsp olive oil.

Roast each pans for 10 minutes. Take away the kale and cauliflower pan from the oven. Gently stir the tofu and candy potatoes, turning them with a spatula. Return the pan to the oven and proceed roasting for 20 minutes, or till the greens are tender and frivolously browned.

Whereas the greens roast, stir collectively the tahini, lemon juice, tamari soy sauce, and garlic in a cup till nicely mixed. Pour the sauce over the nice and cozy greens and toss to coat.

Serve scorching, or permit to chill fully and retailer within the fridge, tightly coated, for as much as 4 days. Makes about 7 cups.
