Tuscan Hen Salad Wrap

Wraps are the epitome of a simple, on-the-go lunch, and this zesty Tuscan hen salad wrap is a living proof. It’s a balanced meal that’s prepared in minutes. Mix precooked hen (or leftover hen), white beans, spinach, tomato, cheese and basil — then wrap, roll and go.

Tuscan Hen Salad Wrap

Components

  • 4 oz. precooked or leftover hen breasts
  • 1/4 cup white beans, drained and rinsed
  • 3 contemporary basil leaves, chopped (or 1/2 teaspoon dried basil)
  • 1 tbsp shredded Parmesan cheese
  • 1/2 medium lemon, juiced
  • 2 tbsp plain 2% Greek yogurt
  • Salt and pepper, to style
  • ¼ cup child spinach
  • 3 medium cherry tomatoes, sliced
  • 1 giant (10-inch) whole-wheat flour tortilla

Instructions

Reheat leftover hen, if desired. As soon as heat, chop hen into bite-size items.

In a small bowl, add hen, white beans, basil, cheese, lemon juice and yogurt. Season with salt and pepper to style.

Layer spinach and tomatoes on the tortilla, then add hen combination. Fold each side of the tortilla towards the middle till the sides nearly contact. Tightly fold the decrease half of the tortilla up over the fillings. Proceed rolling tightly upward, tucking within the left and proper sides as you go. Slice in half with a serrated knife, and serve.
